VODKA-PINEAPPLE-PEÑO

If there was ever a cocktail to match my personality… this would be it.

It has been oh-so gloomy here in Winnipeg this week and it’s really putting a damper on my make-the-most-of-whats-left-of-summer vibes. Thankfully today and tomorrow are looking to be a little bit sunnier so I’ll be soaking it up while I can! Just 2 (un)official weekends left of summer means binge drink all the yummy cocktails you can get your hands on right? No? Kinda? Well if you’re like me, it means 2 weekends left to play around with summer recipes and then drink them out of your prettiest glasses. Or straight out of the pitcher, I mean whatever happens, happens. Still in that summer state of mind…

This past weekend at the lake (after a couple too many boat-bevy’s), I tried something out I’d been seeing all over Pinterest and drink recipe blogs for a while, but never yet took the plunge to make myself – jalapeño infused cocktails!

The cocktail I decided to go with is a new take on a classic and I like to call it the “Vodka-Pineapple-Peño”. It’s a little sweet & a little spicy – so basically, my personality in a cocktail – and it’s a fun twist added to an overall super easy cocktail (or mocktail) recipe! You’ll be finding me sipping these deep into September.

WHAT YOU NEED:

  • 3-4 oz Vodka (substitute with soda water for an alcohol-free option)
  • Pineapple juice
  • 1 jalapeño pepper – sans seeds
  • 1 pineapple round (see photo)
  • 1/2 lime
  • pinch of Cumin
  • ICE, ICE, BABY
  • cocktail shaker
  • straw

WHAT YOU NEED TO DO:

  1. Throw a handful of ice, 4 jalapeño slices, 4 pineapple wedges, and juice of 1/2 lime into the shaker
  2. Pour in the vodka and twice the amount of Pineapple juice
  3. Add a pinch of Cumin to taste
  4. SHAKE IT UP!
  5. Pour in 2 glasses, garnish with leftover jalapeño slice and/or pineapple wedge and add a straw!

WORD OF CAUTION: Fully seed the peppers before putting them in this recipe, and use a straw to avoid sipping from the spot on the glass where the pepper was used as garnish – it got pretty lit when my lips touched this spot, and not lit in a good way!  

 

And just like that, your Vodka-Pineapple just got a lot  more feisty!
